南瓜蛋糕卷
秋天是收获南瓜的季节,南瓜做的蛋糕卷,软软糯糯,散发着南瓜的香味,金黄色的外表,看着非常的讨喜,是我的最爱。

  • 牛奶28g
  • 无盐奶油60g
  • 蜂蜜8g
  • 南瓜135g
  • 蛋黄65g
  • 低粉66g
  • 泡打粉3g
  • 蛋白130g
  • 细糖74g
  • 淡奶油200g
  • 炼奶60g

Steps to make 南瓜蛋糕卷

  • 1.南瓜切片,用微波炉加热10分钟至棉烂软滑,放凉后用手持式搅拌机打成成南瓜泥;
  • 2.牛奶、无盐奶油加热至65℃至融化,再加入南瓜泥拌匀;
  • 3.蜂蜜、蛋黄拌匀,再加至2中拌匀;
  • 4.将过筛泡打粉、低粉加入3中拌匀;
  • 5.蛋白霜打至中性发泡,拉起有硬鸡尾状,
  • 6.将1/3的蛋白霜加入3拌匀,再将余下的2/3倒入拌匀,快速轻柔拌匀,以免消泡;
  • 7.拌好的面糊入烤盘,抹平,震出大的气泡180~190℃/140~150℃ ,烤25~30分钟左右,
  • 8.淡奶油+炼奶打发完成,抹在放凉蛋糕体上,放入香蕉或者芒果等你自己喜欢的水果,卷起,入冰箱冷藏1个小时后,拿出装饰,即可。
