网上搜索看到了这个面皮的制作方法,觉得非常好,简单,基本是零失败。这里面我没有按照要求用低筋面粉,用的就是家里的普通面粉,做出来效果非常好,虽然没有起层,但香酥无比,内陷我做了改良,用了苹果,所以我这个可以叫苹果蛋挞哦,非常好吃,值得推荐。 (主料中是挞皮的材料;辅料中是内馅的材料)

Steps to make 苹果乳酪挞

  • 1.找个保鲜盒,把100g面粉筛到里面。
  • 2.加入1g盐和15g糖。拌匀。加入一个鸡蛋黄。
  • 3.倒入融化的黄油。
  • 4.盖好盖子上下左右晃动,使面粉和蛋黄、黄油相融合。打开盖子,把面弄散弄均匀。
  • 5.装入保鲜袋,团成圆球。放冰箱冷藏半小时。
  • 6.这时候做内馅。我用的方法很简单,把辅料中内陷的材料除了苹果以外,都放在一起,搅打均匀即可。
  • 7.苹果去皮,去核切成小薄片。
  • 8.挞皮冷藏半小时后取出,分成10小份(这步骤我忘记拍照了),取一小份放入模具,用大拇指慢慢压。一直压满整个模具,小心整理均匀。用叉子插满小孔。
  • 9.都做完后,入烤箱中层,170度,烤10分钟。
  • 10.10分钟后取出,倒入搅拌好的内馅。放入苹果片。再入烤箱中层,170度,烤20分钟即可。
