Steps to make 正月初七的biangbiang面

  • 1.把面加入温水和成稍微软些的面团,省半个小时,分成两份,我做的是两人份,压成饼状,两面抹色拉油,再省半个小时。
  • 2.洋葱茄子去皮切丁,西红柿切块,我用的是冷冻西红柿,夏天大地柿子味道比较好。准备肉馅。
  • 3.锅里放底油,油热炒肉馅。
  • 4.茄子洋葱西红柿炒熟家少许郫县豆瓣酱,盐一勺,糖一勺。最后少许水淀粉勾芡。浇头就做好了。
  • 5.把省好的面饼切三厘米条。
  • 6.抻成面条,宽窄看个人喜好。
  • 7.面煮好后凉水投一下,接着烫一下青菜。
  • 8.面盛入大碗中,码上青菜,放少许陈醋,酱油,香油,蒜末,葱花,十三香和辣椒粉,把烧开的热油泼在辣椒上。
  • 9.再淋上浇头,一碗biangbiang面就做好了。
