Steps to make 鲜虾春饼

  • 1.开水加入面粉中, 边用筷子搅拌;
  • 2. 揉搓成光滑的面团,盖上保鲜膜饧上20分钟;
  • 3. 将饧好的面团擀成大圆片, 面皮表面上刷层油;
  • 4. 再用模具按压下相同大小的圆片;
  • 5. 将它们一片一片叠放起来; 烧锅开水, 将面片放入垫有纱布的竹屉上, 大火蒸5--8分钟;
  • 6. 大虾去除虾头和虾壳,从虾背上划开, 挑出虾线;
  • 7.处理好的虾仁清洗干净后用厨房纸巾吸去多余的水分;在虾仁中放入盐、淀粉、蛋清和姜片一起拌均匀腌制一下;
  • 8.再准备好蛋液和面包糠, 将腌制好的虾仁先后放入鸡蛋液和面包糠中滚动, 让其表面均匀的粘满面包糠;
  • 9. 锅中油加热,六、七成热时放入虾仁进去炸;
  • 10. 虾仁炸至金黄后捞出, 再准备好其它配菜;
  • 11. 将蒸好的面饼皮平铺在干净的案板上,放上蔬菜和虾仁;
  • 12. 最后再挤上番茄酱即可。
