Steps to make 黄豆如何做成豆花?

  • 1.准备1500g左右豆子泡发。
  • 2.泡发后用破壁机打成豆碎。
  • 3.将豆碎倒入装有滤布的盆内。
  • 4.隔着滤网反复清洗豆碎2—3次。
  • 5.将清洗好的豆碎汁也就是豆浆倒入锅内,开小火慢煮,一边煮一边用铲子超底轻轻翻动。
  • 6.准备6g左右盐卤。
  • 7.加冷水搅拌至融化。(注意不可直接食用!)
  • 8.我们调一个豆花汁~放1勺生抽,1.5勺醋,1勺辣椒油,小半勺葱伴侣辣椒酱,适量盐,少许葱花蒜末,加少许凉白开搅拌均匀备用。
  • 9.豆浆煮至开后继续煮2—3分钟关火,冷却至90℃左右。
  • 10.均匀放入事先准备好的卤水,用铲子轻轻翻拌均匀。
  • 11.可以明显看到蛋白分离。
  • 12.直至水清,大概这个样子。
  • 13.用滤篮将水滤出并盛出。
  • 14.豆花成型。
