Steps to make Zilai Red Mooncake
- 1. Prepare materials.
- 2. Pour 40 grams of flour into a pot and stir fry over low heat until slightly yellow.
- 3. Cut the cooked walnut kernels into small pieces with a knife.
- 4. Clean the raisins and dice the hawthorn strips for later use.
- 5. Pour white sugar, sesame oil, sweet osmanthus, and cooked flour into a bowl. Add melon seeds, chopped walnuts, and rock sugar to mix evenly to form the filling.
- 6. Pour white sugar, maltose, and baking soda into a bowl, stir well, and then pour in sesame oil.
- 7. Add 200 grams of flour and then add boiling water.
- 8. Knead the dough thoroughly for about 15 minutes, kneading well.
- 9. Roll the kneaded dough into rectangular pieces using a rolling pin.
- 10. Fold the rolled out noodles towards the center on both sides.
- 11. The folded noodles are like folding a blanket and then folding them in half.
- 12. Place the stacked noodles horizontally on the cutting board and roll them out again into a rectangular shape. (Repeat the above process 2-3 times, for a total of 3-4 times of four fold folding)
- 13. Roll out the folded dough again and roll it up.
- 14. Roll into a cylindrical shape.
- 15. Cut the rolled dough into small pieces.

- 17. Take a small pastry recipe, cut it upside down and place it on a cutting board. Use a rolling pin to roll it out into a round dough.
- 18. Roll out the round dough and wrap it with filling.
- 19. Wrap all the mooncakes one by one, dip the beverage bottle cap with a little cocoa powder mixed with water, and print a red circle on the top of the mooncakes.
- 20. Place the wrapped mooncakes on a baking tray with the mouth facing downwards. 180 degrees, middle layer, over high and low heat, bake for 25-30 minutes.
- 21. The surface of the mooncake should turn brownish red.
