中秋月饼
这几天大家都在做月饼,哈哈,我也凑个热闹。

  • 普通面粉155g
  • 红豆沙320g
  • 咸蛋黄8个
  • 转化糖浆95g
  • 食用油45g
  • 枧水5g
  • 鸡蛋1颗

Steps to make 中秋月饼

  • 1.配料,还有食用油和面粉。
  • 2.将转化糖浆,枧水,食用油按量称好,然后倒入到大碗中,用打蛋器搅拌成乳液状。
  • 3.将称好的面粉倒入拌好糖浆里,翻拌均匀。
  • 4.揉成面团,盖上保鲜膜,醒发一小时。
  • 5.用40克的豆沙将蛋黄包住 ,团成圆球。
  • 6.将醒好的面团下成40克左右的8个面团,揉圆。
  • 7.将面团压成一个大薄片,慢慢的用虎口团起来,将豆沙球包严实。
  • 8.包好的饼坯,团圆。
  • 9.用模具压出花型,放入烤盘。
  • 10.烤箱先预热,然后放入饼坯先烤5分钟。
  • 11.然后取出刷上蛋液,用锡箔纸盖上再烤5分钟,我的烤箱是简易的那种,没法控制温度,所以第二次烤的时候根据饼胚的颜色,决定盖上一张锡箔纸。
  • 12.烤好的月饼,上面那个火有点大了。
  • 13.另外一个花型的。
  • 14.切开的样子。
  • 15.刚烤出来的是脆的,把她们放在盒子里等着回油,变软。
