Steps to make 酱淋鱼片

  • 1.鲤鱼一条600克,用黑鱼或是鲈鱼代替也不错
  • 2.取一个小碗,放姜丝、葱段、料酒揉挤几下
  • 3.鲤鱼刀工处理,将鱼头和鱼骨取出,鱼骨斩成小块,加入姜葱料酒抓匀腌制
  • 4.将鱼肉斜切成片清洗两遍,加生粉、胡椒粉、姜葱料酒抓匀腌制,最后加半勺花生油增加滑嫩
  • 5.小米辣剁碎,剁椒剁碎,姜蒜切末
  • 6.锅内加适量清水,放入姜片和葱段
  • 7.将水烧开,放入鱼头和鱼骨焯一下水,断生就可以
  • 8.将焯过水的鱼头鱼骨捞出,摆盘
  • 9.将鱼片放入锅中焯水约20秒
  • 10.将鱼片捞出摆在鱼的中间位置
  • 11.锅加底油,下姜末、蒜末、小米辣、指天椒小火炒香
  • 12.加适量清水,生抽、盐、鸡精提味,再加淀粉水勾茨
  • 13.将锅内的汤汁淋在鱼身上
