可可戚风蛋糕
很久没有做“气疯”蛋糕,怕有些手生,昨晚做了一个可可气疯蛋糕,今天早上当早餐吃了,和妈妈各一块,又拿了些给同事们吃,非常不错的一款可可气疯蛋糕。

  • 玉米油65克
  • 柠檬汁少许
  • 低筋面粉90克
  • 砂糖70克
  • 牛奶65克

Steps to make 可可戚风蛋糕

  • 1.将鸡蛋分离,盆内必须无水无油
  • 2.五个蛋黄里加入30克细砂糖,打匀至蛋黄颜色变浅,边搅拌边加入65ml玉米油,再边搅拌边加入65ml牛奶
  • 3.筛入90克低筋面粉和10克可可粉,用手动打电器搅拌均匀至光滑细腻无颗粒状
  • 4.这是搅拌好的蛋黄糊放在旁备用
  • 5.蛋白中加入少许的柠檬汁
  • 6.5个蛋白用电动打蛋器打至粗泡状态,加入1/3砂糖(共40克砂糖),打至细腻的泡沫,再加入1/3糖,继续打至起纹路状态,把剩下的糖加入,继续打至干性发泡;(干性发泡:打蛋头从蛋白霜中拉起,有直立不倒的尖角)这个样子蛋白就打发到们了,无需再打发了
  • 7.取1/3蛋白霜入蛋黄糊盆中,完全翻拌均匀
  • 8.再取1/3蛋白霜入蛋黄糊盆中,再一次完全翻拌均匀;将蛋黄糊盆中的面糊倒入剩下的蛋白霜盆中;完全翻拌均匀至光滑细腻无颗粒状
  • 9.将面糊倒入8寸活底模具中,在桌面上轻磕几下,震出气泡
  • 10.烤箱预热,放中下层,上下火各120度,60分钟
