花生核桃老婆饼
老婆饼是广东潮州地区一种汉族传统名点,皮薄馅厚,馅心滋润软滑、味道甜而不腻,是一道不错的点心。我是用花生米和核桃做的料馅,虽然不很正宗,但却很好吃。

Steps to make 花生核桃老婆饼

  • 1.核桃、花生米入烤箱烤熟
  • 2.取出晾凉
  • 3.利用这个时间制作水油皮:150g面粉加30g糖、30g玉米油和70g温水和成面团饧发
  • 4.制作油酥:110g面粉加50g玉米油和成面团饧发
  • 5.利用饧发面团的时间处理馅料:将晾凉的花生米去皮入料理机研磨杯
  • 6.打成粉
  • 7.同样将晾凉的核桃入料理机研磨杯
  • 8.打成细粉
  • 9.加20克糖
  • 10.用手抓匀
  • 11.搓成大小适中的圆球,至此馅料就做好了
  • 12.将饧发好的俩面团分别分成九个剂子
  • 13.水油皮擀成小圆饼上面放油酥
  • 14.包起来
  • 15.擀成舌头状
  • 16.卷起来
  • 17.折叠
  • 18.再擀成圆片放一个花生、核桃馅料
  • 19.包起来按扁
  • 20.表面刷蛋液
  • 21.用小刀划三道口
  • 22.预热烤箱200度烤15分钟左右,表面上色后加盖锡纸改180度再考15分钟
  • 23.烤好后及时取出晾凉
