自制简易版凉皮
炎炎夏日没有胃口,来道香辣开胃Q弹爽滑的凉皮吧,不用洗面,超级简单。

Steps to make 自制简易版凉皮

  • 1.将高筋面粉、红薯粉和盐混合均匀;
  • 2.加入300g水顺时针搅拌,搅拌至米糊完全顺滑,无颗粒;
  • 3.加入剩下的水继续顺时针搅拌均匀,这个就是面浆;
  • 4.舀一勺面浆到披萨盘里,晃均匀铺满盘子;
  • 5.放入已经烧开水的蒸锅里蒸5分钟左右;
  • 6.将蒸好的面皮倒在刷了油的篦子上,每一层面皮之间都要刷一层油,重复4-6步骤直到所有面浆都蒸好;
  • 7.将晾凉的面皮切成细长条放入碗内,大蒜子压成蒜末,绿豆芽焯一遍晾凉,黄瓜去皮擦丝,全部放入凉皮上;
  • 8.放适量生抽和醋;
  • 9.放入适量太太乐鲜鸡汁和红油,拌均匀即可;
