三绝麻辣小龙虾
麻小好吃,但单纯的麻辣小龙虾是不是总觉得少点儿什么呢?咱今天来个鸡翅、麻小、脆藕片一锅出。保证又麻又辣又过瘾,还能满足各种口感的需要。

准备好这样一锅美味,备上啤酒,打开电视看奥运,为中国队加油吧!

  • 香叶两片
  • 桂皮1段
  • 八角两个
  • 麻辣香锅底料1包

Steps to make 三绝麻辣小龙虾

  • 1.鸡翅洗净,正背打花刀,加盐、生抽、料酒、白胡椒粉、糖、鸡精抓匀腌制15分钟
  • 2.腌制鸡翅的同时,藕洗净去表皮,切片(不要切太薄,大约5毫米左右厚度即可),切好的藕片泡水,除去表面多余淀粉
  • 3.煮锅水中加盐,沸腾后下入藕片焯大约两分钟断生
  • 4.焯好的藕片捞出备用
  • 5.小龙虾清洗干净(小龙虾一定挑选鲜活的,死了的不能要,可能会释放毒素),下层铺姜片,装入蒸屉中
  • 6.鸡翅也腌制差不多了,为了节省时间,直接铺在小龙虾上面,再放几片姜片
  • 7.这样大火上气后,转小火一起蒸15分钟
  • 8.15分钟后,小龙虾已经熟了,把小龙虾夹出来备用
  • 9.留下鸡翅再蒸5-10分钟
  • 10.用筷子可以顺利插入鸡翅,说明已经软烂了,关火,夹出备用
  • 11.主料已经全部准备好了,然后把大葱切段、整瓣蒜剥皮、姜片备用、香菜切末、香叶、麻椒、桂皮、八角、干辣椒、麻辣香锅底料准备好
  • 12.热锅凉油,下入姜片炝锅,再下入麻椒、香叶、桂皮、八角煸炒出香味
  • 13.椒麻味出来后,下入抓碎的干辣椒(稍微抓碎些,辣味才能释放出来,如果不太能吃辣,就不要抓碎)
  • 14.辣味出来后,下入大葱段、蒜瓣翻炒煸香
  • 15.下入麻辣香锅底料继续翻炒出红油
  • 16.下入藕片翻炒2-3分钟,可以稍微加点水(藕片特意切得比较厚,这样可以保持脆脆的口感)
  • 17.下入鸡翅翻炒
  • 18.下入小龙虾翻炒均匀,加料酒,再加一点水,稍微小煮一会儿使其更好入味(个人觉得麻辣香锅底料的咸度已经够了,所以我没再加盐,您可以按照自己口味适当调节)加入少量糖提鲜,待汤基本收干,关火出锅啦
  • 19.红红火火,麻辣好吃
  • 20.配扎啤酒,实在是太棒啦
  • 21.搭配了鸡翅、脆藕片,更加过瘾(有报告指出,小龙虾不要吃头部,因为头部容易重金属超标,只是身体和螯足是没有任何问题的)
