麻辣小龙虾是簋街最具有特色的一道菜。簋街的麻小辉煌时,在长达一千四百米长的簋街,一百零六家店铺卖麻小,一天大约能卖出三万公斤。可用虾流成河、人潮如涌来形容,小龙虾虾肉新鲜弹牙,味儿重,够麻辣,吃得人大呼过瘾,这样的诱惑有谁能挡住呢?

Steps to make 麻辣小龙虾

  • 1.葱姜洗净切片、蒜去皮拍松。
  • 2.小龙虾倒入清水中,加盐和香油,养半天让小龙虾吐脏,用牙刷刷干净。
  • 3.用手拉住它的尾巴中间那块尾甲,顺势一拉,拉出肠线。
  • 4.锅置火上适量油烧热,爆香葱、姜、蒜、花椒、八角、香叶、干辣椒。
  • 5.加入2勺郫县豆瓣酱,改小火炒出红油。
  • 6.转大火将沥水的小龙虾倒入锅中,快速翻炒。
  • 7.待小龙虾变成火红色,烹入1勺白酒翻炒均匀。
  • 8.调入2勺生抽、1/2勺盐、白糖1/3勺,翻炒几下。
  • 9.倒入啤酒没过小龙虾2/3处即可。
  • 10.盖上盖子,改至中火焖烧。
  • 11.焖烧至汤汁剩1/3时,改至大火收汁即可。
