奶油泡芙
刚刚烤好的泡芙外皮松脆,咬上一口,甜甜的奶油香滑细腻,真是甜蜜的享受哦

  • 鸡蛋2个
  • 葵花籽油35克
  • 1克
  • 清水140克

Steps to make 奶油泡芙

  • 1.准备好需用的原料。
  • 2.需用的奶油。
  • 3.低粉过筛两次。
  • 4.鸡蛋打入碗中搅散。
  • 5.水、盐和葵花籽油混合后,煮至沸腾。
  • 6.将过筛好的低粉筛入。
  • 7.快速搅拌至面粉完全成团且不粘锅子,即可关火。(一定要让面粉都被烫到,这样才能烫断面筋,泡芙才能涨起来)
  • 8.面团稍稍放凉后,约在60度左右,分次加入鸡蛋。
  • 9.完全搅拌至面糊把蛋液全部吸收,面糊成浓稠状,用刮刀挑起面糊时呈倒三角形就可以了。
  • 10.装入裱花袋中。(我用的是大号八齿菊花嘴,觉得烤出的泡芙表面有纹路要好看点)
  • 11.烤盘垫上油布(或油纸),将泡芙面糊挤在烤盘上,之间多留些间隔,以免膨涨后粘在一起。放入提前预热好的烤箱,中层185度烘烤约25分钟,呈金黄色即可。
  • 12.打发奶油。
  • 13.裱花袋剪一个小口,装入打发好的奶油。(以前用过那种专挤奶油的细花嘴,觉得一点也不好挤,还是这样直接用裱花袋挤来得方便哈)
  • 14.在泡芙的底部用小刀划一小口。
  • 15.将奶油挤入泡芙即可。
