【北京】黄焖鸡
春节临近,大菜必须准备起来了。鸡鸭鱼肉要齐全,明年是鸡年,先来做鸡肉。今天做了一道黄焖鸡腿。备受家人喜爱,着重对这道菜做了点评并提出了口头表扬。肉质鲜嫩,汤汁对味儿,下饭必备,节日首选!

  • 大鸡腿2个
  • 胡萝卜1根
  • 生抽4勺
  • 蚝油2勺
  • 柿子椒1个
  • 香菇4朵
  • 1克
  • 老抽2勺
  • 冰糖少许

Steps to make 【北京】黄焖鸡

  • 1.大鸡腿洗净,泡20分钟左右,切成4厘米左右大小的块。
  • 2.准备配菜。柿子椒和胡萝卜洗净切片,姜切片,葱切段。香菇去蒂切片。
  • 3.调汁。碗中加入生抽4小勺,老抽2小勺,蚝油2小勺,盐1克,再加些清水。(勺的量我用的就是图片中的勺子)
  • 4.锅中烧开水,放入鸡块焯水后控干备用。
  • 5.锅中放油,小火,放入冰糖(冰糖最好选用碎冰糖,易化)炒糖色。直至冰糖融化呈深褐色,一定不要火太大。
  • 6.加入葱姜片爆香。
  • 7.加入鸡块翻炒。
  • 8.加入香菇翻炒。
  • 9.加入调好的料汁,翻炒均匀。
  • 10.再加入没过鸡肉的清水,大火烧开后,中小火慢炖。
  • 11.汤汁还剩不到一半时,加入胡萝卜和柿子椒,翻炒。出锅。
