浆水鱼鱼是陕西关中、陕南农家传统小吃。也是夏令消暑的必备佳品,其特点:清爽利口,酸香醒神。

  • 香葱3根
  • 一小块
  • 酱油2克
  • 味精3克
  • 花椒十几粒

Steps to make 浆水鱼鱼

  • 1.原料
  • 2.备玉米粉、面粉
  • 3.将洗净的韭菜、芹菜切段,香葱切碎姜切末,浆水菜倒入小碗
  • 4.坐锅热油,下韭菜炒香,放酱油
  • 5.放盐,炒熟盛出
  • 6.原锅洗净,加少许油烧至五成热炝入干红椒和花椒
  • 7.干红椒和花椒煸出香味后(中小火)放香葱碎和姜末
  • 8.倒入浆水菜炒香出味
  • 9.放芹菜
  • 10.倒入两碗水大火烧开
  • 11.调入盐煮几分钟
  • 12.放味精,关火
  • 13.将面粉搅拌成稀糊状
  • 14.煮锅入水,大火烧开后倒入面糊
  • 15.面糊烧开后转小火,一遍用长筷(或擀面杖)搅,一边撒入玉米粉,边撒边搅
  • 16.面糊烧开后转小火,一边用长筷(或擀面杖)搅,一边撒入玉米粉,边撒边搅
  • 17.要搅均匀光洁细腻,直到搅成糊状,即成搅团
  • 18.用勺将搅团舀入漏子中
  • 19.用勺将搅团舀入箩漏中,搅团顺箩漏孔漏入凉开水盆中
  • 20.漏出大量的鱼鱼
  • 21.鱼鱼合影
  • 22.用漏勺舀出鱼鱼,浇上浆水汤和韭菜,食用时调辣子油
