京东肉饼也叫香河肉饼。

Steps to make 京东肉饼

  • 1.用温水加点食盐和面(面要和的比包饺子的面软和,水可以分几次加,别急,慢慢来。)把面揉光。和面的高手如是说:和面要三光,面光,盆光,手光。面和好后,用潮湿的净布盖好,防止表面干燥,饧半个小时。
  • 2.肥三瘦七的肉馅里加入葱、姜末,加老抽、胡椒粉、味精、香油、少许花椒粉和五香粉,充分绞匀,直到上劲。记住:此时即便洋葱已经切好,也不要加进肉馅里;肉馅搅和的差不多了,洋葱切成末,切好后,放个盆里晾晾水气,这洋葱一定要在包馅之前再加入肉馅里,而且加入洋葱后就不要用力搅拌了,是什么道理我也不十分清楚,就知道这样才格外香,而且馅不容易出汤。
  • 3.揪一坨面,大概鸡蛋大小,揉圆按扁,擀成2mm左右厚的圆片,半径方向切一刀。
  • 4.在3/4的面坯上均匀抹上调入洋葱末的肉馅,面坯的边上留点空余。
  • 5.肉馅抹匀后,将没有抹馅的1/4面坯翻转过来盖上,把面坯边上轻轻捏紧。
  • 6.然后将捏好1/4饼坯再折过来。
  • 7.最后将剩下的1/4饼坯翻过来,边缘轻轻捏紧。成型了,地道京东肉饼就是这个样子,象个胖乎乎的扇子。
  • 8.好了!可以开烙!!平锅里放油,油热后,小心放入饼坯,轻轻晃动平锅,避免沾锅,中火定型约30秒,向锅内点50ml水,迅速盖上锅盖,让水气闷一下,好加速馅的成熟,待水气消失后,改用小火,揭开锅盖,将饼翻个面,继续烙。
  • 9.出锅了!!色泽诱人!不知道馅的味道调的怎么样?今天的饼有点大,上桌前切一刀。
  • 10.配上几样小菜,一顿不错的午饭啊!老少几爷子吃的满嘴留香,肚子滚瓜溜圆。
