奶油戚风蛋糕卷

Steps to make 奶油戚风蛋糕卷

  • 1.蛋糕材料准备好
  • 2.牛奶玉米油混合均匀
  • 3.加入15克细砂糖,混合均匀
  • 4.蛋白、蛋黄提前分离;加入蛋黄,搅拌均匀
  • 5.筛入蛋糕粉
  • 6.搅拌均匀,无面粉颗粒,备用
  • 7.蛋白入无水无油的打蛋盆中,电动打蛋器打出细小的气泡,放入15克细砂糖,继续高速打发
  • 8.打出细腻发白状态时,放入15克细砂糖,继续高速打发
  • 9.出现明显纹路时,加入剩下的15克细砂糖
  • 10.提起打蛋器,蛋白呈尖角却略有弯曲状,即接近硬性发泡
  • 11.取三分之一蛋白糊入蛋黄糊中,上下轻轻地翻拌均匀
  • 12.再将三分之一蛋白糊入蛋黄糊中,翻拌均匀后,倒回蛋白糊盆中,继续翻拌均匀,成为光滑细腻的蛋糕糊
  • 13.蛋糕糊倒入铺好油纸的烤盘中,表面用刮板抹平,轻震两下,震出大气泡
  • 14.入预热好的烤箱,中层,180度,上下火,15分钟左右,表面金黄
  • 15.出炉后,从烤盘中拖出,置于晾架上,表面盖一张干净油纸
  • 16.5分钟之后,将蛋糕片翻面放置,并揭去底部的油纸,将其盖在蛋糕片表面
  • 17.淡奶油,白砂糖准备好
  • 18.入盆中,打发好
  • 19.将奶油均匀地铺平在蛋糕片上
  • 20.卷成卷后,油纸包好,放冰箱冷藏40分钟
  • 21.切块食用
