Steps to make 腌黄瓜

  • 1.黄瓜洗净,蒜剥皮,姜去皮,小米辣洗净。
  • 2.黄瓜洗净切去两头,再切拇指肚大小的段,然后一分为四。
  • 3.放入两匙盐,搅拌均匀。
  • 4.找一个盘子压在黄瓜上面。
  • 5.盘子上面再放一个重物,我放的是一个蒜臼子。
  • 6.蒜洗净切片,姜切片,小米辣切成段。
  • 7.黄瓜腌制四小时后,将腌出的水分倒出去,用纱布包好,再挤去水分。
  • 8.碗中加入五匙生抽。
  • 9.三匙醋。
  • 10.适量的花椒、大茴。
  • 11.六七块冰糖。
  • 12.倒入一杯清水。
  • 13.放入锅中煮沸腾,然后放凉备用。
  • 14.把姜片,蒜片和小米辣放入黄瓜中。
  • 15.倒入放凉的料汁,再加入二两白酒,不喜欢酒味的可以不加。
  • 16.用保鲜膜封好,放入冰箱冷藏12个小时便可以食用了。
  • 17.立秋以后腌黄瓜扭,脆嫩爽口、辣味适中、开胃消食,好吃又下饭。
