Steps to make 自制红豆沙馅

  • 1.挑干净红豆里的杂质,提前一晚用水泡发。
  • 2.红豆倒入高压锅,加入比红豆高2厘米′的水,再加两勺糖。
  • 3.高压锅上气后关小火,煮25分钟。如果红豆量大应适当延长时间。
  • 4.如果水量和煮制时间合适,红豆出锅是一颗一颗的,这时可以先盛出一碗用做蜜豆。
  • 5.剩余的红豆需要再加工炒制成豆沙。要想得到口感细腻的豆沙,需要借助破壁机打一下。
  • 6.加适量水,按果蔬键。想要砂粒感就少打几秒,想要细腻感就多打几秒。
  • 7.分次打好的豆沙糊倒入不粘锅,加适量白砂糖中小火炒制。
  • 8.炒到水分蒸发差不多,加两勺猪油,没有猪油也可以加其他油。
  • 9.最后炒到豆沙馅抱团,不怎么粘锅就可以关火了。
