咸蛋蒸肉饼
平时买的的咸蛋都是一层厚厚的黑灰包裹着鸭蛋,黑乎乎的,敲开之后蛋黄色泽很好、成凝固状态,蛋液也是透明的。这次在超市买的咸蛋只有一层保鲜膜裹着一些粗盐,看似干净鲜亮,敲开之后蛋黄的颜色淡了许多,而且没有完全凝固,不过用这种咸蛋蒸出来的肉饼咸淡适中,很美味哦。

  • 咸蛋1个
  • 酱油1汤匙
  • 鸡粉少许
  • 香油少许

Steps to make 咸蛋蒸肉饼

  • 1.备好食材,肉末用较大的碗盛起
  • 2.肉末调入盐、鸡粉、生抽、香油搅拌均匀、腌制片刻
  • 3.敲破咸蛋,先把蛋清倒入肉末中
  • 4.用筷子朝一个方向搅拌,约搅拌10分钟
  • 5.换个小一些的容器盛起搅拌好的肉末,用汤匙抹平,中间位置挖个小坑
  • 6.咸蛋放在肉末上面的小坑里
  • 7.放入电饭锅隔层,煲饭时一起蒸熟,也可以用蒸锅隔水大火蒸20分钟即可
