糖耳朵
蜜麻花是北京小吃中常见名品,又称糖耳朵,因为它成形后形状似人的耳朵得名。前人有诗说:“耳朵竟堪作食耶?常偕伴侣蜜麻花,劳声借问谁家好,遥指前边某二巴》。”并注说:“糖耳朵蜜麻花,为清真教人所制食品,其原料不外砂糖面粉及小糖等,小糖即俗称之稀也。

Steps to make 糖耳朵

  • 1.酵母溶于温水中,静置5分钟备用。
  • 2.面粉加入酵母水和成软面团,包上保鲜膜室温下发酵1-1.5小时。
  • 3.发酵至原来的1.5倍到2倍大,呈现蜂窝状;用手轻轻将面团挤压排除气泡。
  • 4.发酵面兑上少许碱,揉至面团不沾手、有韧性,闻起来带一点点的碱味。
  • 5.将盆中面粉砌粉墙,中央倒入麦芽糖。
  • 6.将麦芽糖向四周划带粉类成糊状,然后将面粉撮向中央揉合成团。
  • 7.发酵面团和糖面团分割成相等小份。
  • 8.用擀面杖将面团分别擀成一指厚的长方形片。
  • 9.两层发酵面夹一层糖面叠起。(在叠放面饼时要之间刷少许水粘和,防止下锅炸制时松散)
  • 10.叠好的面饼切三指宽的小长方形条。
  • 11.将面饼的一端压薄形成坡状。
  • 12.将面片切成两指头宽的小方块,两端折叠在一起,中间开一刀口。
  • 13.打开,将薄的一面往里翻过去,厚的一边一折,就成了耳朵形的坯子。
  • 14.做出若干耳朵形生坯。
  • 15.锅中油烧至5成热,将生坯入油里炸过,呈金黄色时捞出,沥油。
  • 16.趁热倒入麦芽糖浆中过蜜,浸透后,捞出晾凉即可。
