锦鲤馒头
锦鲤馒头,寓意年年有余,富贵吉祥。
此配方是两条鱼的量。

Steps to make 锦鲤馒头

  • 1.把主料放入美遇厨师机里,先低档混合均匀,然后用1档搅拌6分钟。
  • 2.取出面团揪出两小块,分别加入仙人掌果粉和深黑可可粉。盖上保鲜膜备用。
  • 3.剩下的面团一分为二,其中一份加入适量仙人掌果粉揉成粉色面团。
  • 4.取粉色面团为例,搓成圆柱状。头部稍微尖一点。
  • 5.把手掌立起来在尾部轻轻搓几下,搓出尾巴状,如图所示。
  • 6.压扁,切出一个三角。
  • 7.压出纹路。尾巴就做好了。
  • 8.正上方捏出背鳍,推出花纹。
  • 9.移到蒸盘上,方便操作,剪出鱼鳍,压出纹路。
  • 10.用食指和大拇指捏出鱼嘴。
  • 11.取一点白色面团搓成细长条,抹水,粘在鱼嘴上。
  • 12.用勺子压出鱼鳃,两侧扎圆孔,白色面团揉成小球放在圆孔位置,再扎出圆孔。
  • 13.取黑色面团揉成小圆球,抹水放入圆孔中,鱼眼就做好了,然后再扎出两个鼻孔。
  • 14.用工具或者勺子把儿压出鱼鳞。
  • 15.生坯就做好了。
  • 16.白色的也如上述方法做好。可以整理一下,做成不同的造型。
  • 17.做的另一条红鱼(我是和了两次面,共做了4条鱼)
  • 18.做好的生坯发酵至2倍大,放入美遇蒸烤箱中,100度25分钟即可。
