湘味辣子鸭

  • 鸭肉1000g
  • 4g
  • 鸡粉3g
  • 白糖2g
  • 蚝油2g
  • 酱油3ml
  • 生抽3ml
  • 料酒5ml
  • 茶油300ml
  • 少许
  • 干辣椒10g
  • 水淀粉3ml
  • 八角4个
  • 桂皮2片
  • 香叶3片
  • 麻辣椒油5ml

Steps to make 湘味辣子鸭

  • 1.洗净的鸭肉用斩骨刀斩成小块待用。
  • 2.锅内注入清水倒入斩好的鸭肉一块倒入锅中,中火煮至20分钟。
  • 3.利用煮鸭肉时间准备材料:葱段,姜片,干辣椒,花椒,八角,桂皮,香叶,茶油。
  • 4.制作辣椒油:小饭碗中倒入辣椒面,花椒。锅内注油烧至5成热,倒入已经准备好材料的碗中用勺子快速搅拌红彤彤的辣椒油出来,弄好的辣椒油用漏勺过滤完辣椒渣,待用。
  • 5.将煮好的鸭肉捞出沥干水分待用,打一碗鸭肉高汤待用。(留一碗鸭肉高汤这样鸭肉的原汁原味不会跑掉)
  • 6.锅中注入茶油(记住此环节不能有丝毫普通食用油这样会影响这倒菜的味道)
  • 7.倒入葱姜蒜煸香。
  • 8.倒入汆煮好的鸭肉加入料酒炒香。
  • 9.加入盐,白糖,鸡粉,耗油,生抽,老抽,干辣椒炒匀。
  • 10.倒入八角,桂皮,香叶,制作好的辣椒油炒匀加入鸭肉高汤焖煮至5分钟入味。
  • 11.盛出菜肴,撒上芝麻,葱花即可。
