糖醋排骨是我的拿手菜之一。
每次来人聚会或者节假日餐桌,我都会做上一盘,让人大快朵颐。
这种烧法的糖醋排骨是和老爸学的,不需要油炸,口感更香鲜,也更健康一些。

Details of ingredients

  • 猪肋排500g
  • 花椒30粒
  • 大料3个
  • 白酒3ml
  • 白糖15g
  • 红糖15g
  • 香醋15ml
  • 酱油15ml

Steps to make 糖醋排骨

  • 1.买回来的排骨用清水冲洗至排骨颜色发白。
  • 2.电高压锅加入适量的清水,放入葱姜,大料,香叶和白酒。
  • 3.冲洗干净的排骨入开水中焯烫一下。
  • 4.再冲洗一下放入电压锅中。
  • 5.加盖子煮上8-10分钟。
  • 6.煮过的排骨捞去掉葱姜作料。
  • 7.炒锅倒油放入花椒小火炸香。
  • 8.再加入白糖和红糖。
  • 9.继续小火炒糖色至糖变褐色。
  • 10.倒入煮过的排骨。
  • 11.翻炒至排骨上色。
  • 12.加入香醋。
  • 13.再加入酱油。
  • 14.加入一碗煮排骨的汤汁。
  • 15.加盖大火焖至。
  • 16.汤汁快干加入盐调味。
  • 17.最后大火把汤汁收浓稠即好,盛盘后可撒些熟芝麻。
