广式豆沙蛋黄月饼
又了一年月饼季,月饼的口味也可以说是越来越繁多。

有经典的五仁、莲蓉、也有黑暗料理界的香辣牛肉味。

我最喜欢的还是豆沙蛋黄味。

Details of ingredients

  • 金龙鱼面包用小麦粉84克
  • 金龙鱼糕点用小麦粉84克
  • 转化糖浆116克
  • 花生油50克
  • 枧水4克
  • 低糖豆沙400克
  • 咸鸭蛋黄20个

Steps to make 广式豆沙蛋黄月饼

  • 1.准备好所有月饼用所有的材料。
  • 2.转化糖浆、花生油、枧水放在打蛋盆里,用手动打蛋器搅拌均匀。
  • 3.筛入金龙鱼面包用小麦粉和糕点用小麦粉各84克。
  • 4.用刮刀慢慢翻拌均匀,直到看不见干粉即可,这个过程不能着急。
  • 5.做好的面团,用保鲜膜包起来,松弛2个小时左右。
  • 6.下面我们来做月饼馅,取豆沙平均分成20份,每份20克,20个蛋黄,最好用小号。
  • 7.将豆沙馅压成圆饼状,中间放上咸鸭蛋黄,用豆沙馅把蛋黄包起来。
  • 8.依次把所有的馅料搓成圆形备用。
  • 9.松弛好的面团平均分成20个,滚圆备用。
  • 10.把面团压成圆饼状,中间放上做好的豆沙蛋黄馅,让馅料紧贴着饼皮。
  • 11.用虎口慢慢的从下往上推饼皮,让饼皮贴着馅料慢慢的往上。
  • 12.最后收口滚圆,依次把所有的月饼做成圆球状备用。
  • 13.月饼模具里面放上自己喜欢的花片,在月饼模具里面沾少许的面粉,防粘。
  • 14.把做好的月饼面团,放入月饼模具中,稍微压一下。
  • 15.月饼模具转移到烤盘上,用力按压月饼模具,然后轻轻提起月饼模具,让月饼成型,放在烤盘上。
  • 16.依次把所有的月饼做好,每做一个,都要沾一下面粉,用来防粘。
  • 17.烤箱预热200度,烤5分钟,让月饼定型。
  • 18.取出月饼,在月饼表面刷一层蛋黄液烤箱改成170度,放入月饼,烤20分钟,出炉放凉就可以食用了。
