0基础学做凉皮
我也是第一次学做,都没成功,后来觉得要更加详细的解说,这样大家就都会做爱吃了凉粉了!!

Steps to make 0基础学做凉皮

  • 1.和面~~首先把4分之三的面倒入盆中加少量水和面,如果水太多就把剩下的面倒入,倒入后太干就加一点点水,和到表面光滑,上面盖上保鲜膜放那静置15分钟,这期间你可以去准备调料,配料
  • 2.蒜头大概7或8粒切碎,加入生抽,油,味精,搅拌机,变成调味稍后用到
  • 3.准备好豆瓣酱,辣椒粉,盐巴,干辣椒,花椒,锅加热,倒入油(你可以加很多油做辣椒油)然后在加去之前蒜头捣碎的调味。
  • 4.我油加太少了,后来我又加了油。就变成有很多辣油拉~~,中间用筷子点下味道,淡的话加盐巴
  • 5.装在容器里。冷却后可以保存在冰箱,这个辣椒酱很有用处的。凉拌都可以用的。
  • 6.准备洗面了,把之静放的面用盆子洗啊洗撮到水变很乳白,倒入稍大容器里,这个水可不能倒了,有用的。然后不停的类是洗面,知道面洗的没颜色了。然后把容器里的乳白也好白色也好的水静放,3个小时以上。你会发现上面颜色变浅了,这时候你把这水小心倒去,直到很白的浓浓的水出现,别倒拉!
  • 7.洗成这样。。就是面筋啊,拿去蒸了就可以吃了。悲剧的是我不会蒸面筋,我的失败了。这里请教各位面筋的烹饪
  • 8.我吃太饱了,觉得家里空心菜特别多,所以榨了空心菜汁汁打算染色,哈哈,这个可以忽略
  • 9.面浆倒入铁盘子里,下锅蒸,我弄的比较薄,这里我用的不是专业的批萨盘,所以我下面要抹上一层薄薄的油
  • 10.蒸。。。
  • 11.起泡了~可以拿出来了
  • 12.把家里的洗碗池堵住加入冷水,然后把盘子上上面冷却,这时候也在凉皮面上涂上一层薄薄的油。防止一会成叠堆的时候粘住了
  • 13.慢慢把皮面从盘子撕下来,然后放好,一会切成面条~
  • 14.加入刚刚做的辣椒油,黄瓜切丝,豆芽捞一遍,然后加醋。搅拌,搞定!
  • 15.大锅版本的凉皮~
  • 16.平常家里煮面条吃也可以加入之前做的辣椒油哦,味道很好
