Steps to make 油泼鱼

  • 1.鱼切去头尾,去皮剔骨,留纯肉备用。
  • 2.斜着片鱼片,越薄越好。用清水淘洗到晶莹透亮,没有污渍。
  • 3.用盐一茶匙,胡椒粉一茶匙(建议用白胡椒,吃不惯就用黑胡椒),蛋清,食用油一汤匙,腌渍十分钟。
  • 4.鱼骨头鱼皮,头尾,加葱姜,一茶匙盐,煮开,撇去浮沫,小火煮一会。
  • 5.捞出鱼头,和鱼皮鱼骨,摆盘,一片一片下入鱼肉,大火,煮开就捞出来,要小心点,别搅碎了。
  • 6.鱼头鱼尾巴摆好,鱼皮鱼骨头垫地下,鱼片在最上面。
  • 7.放好鱼骨鱼皮浇两汤匙蒸鱼豉油,鱼片码好,再浇两汤匙,要均匀一些,最后摆上葱姜红辣椒丝
  • 8.锅上烧油,到冒青烟,关火,浇在鱼上,要均匀,最好用汤勺。小心别有水,会溅。
  • 9.完成,香气扑鼻。
