好久没做过蛋糕卷了,这次做为了消灭裱花蛋糕剩下的半盒奶油,特意试试蛋糕卷,第一次把蛋糕卷做得这么漂亮哦!很激动!呵呵,原来看起来如此简单的蛋糕卷还是需要些窍门滴

  • 100克
  • 牛奶50克
  • 泡打粉二分之一小勺

Steps to make 奶油戚风卷

  • 1.蛋清蛋白分开,蛋清分三次加入60克糖,打至湿性发泡
  • 2..蛋黄加入剩下的20克糖,打至体积变大,颜色变淡
  • 3.分两次加入食用油,每一次都用打蛋器打到混合均匀再加下一次
  • 4.加入牛奶,轻轻搅拌均匀
  • 5.低粉和泡打粉混合后筛入蛋黄糊里
  • 6.用刮刀翻拌均匀,成为蛋黄面糊
  • 7.蛋黄糊和蛋白糊混合,翻拌均匀
  • 8.倒入放了油纸的烤盘,抹平,用力震几下,震出大气泡
  • 9.把烤盘放入预热好180度的烤箱,烤20分钟
  • 10.出炉,反扣
  • 11.趁热撕去油纸
  • 12..200克奶油加入20克糖打发
  • 13.抹在蛋糕上
  • 14..微微热的时候卷起来,放入冰箱定型
