  • 黄油18克
  • 蛋黄23克
  • 细砂糖22克
  • 玉米淀粉4克
  • 牛奶60克
  • 蛋白38克

Steps to make 舒芙蕾芝士蛋糕

  • 1.(准备工作:先把蛋白冻到有少许冰渣后才能用,然后烤模铺油纸)奶酪和软化黄油放入锅内隔水加热
  • 2.然后用手持打蛋器搅拌到顺滑
  • 3.把蛋黄和细砂糖放另一个碗内,用手持打蛋器搅拌均匀
  • 4.然后如图3加入玉米淀粉,然后搅拌均匀
  • 5.把煮沸的牛奶倒入蛋黄糊内,搅拌均匀
  • 6.把牛奶蛋黄液用隔水加热的方法边加热边搅拌直到成糊状
  • 7.把煮好的蛋黄糊倒入奶酪糊里搅拌均匀
  • 8.把结了冰碴的蛋白用打蛋器打至7分发后分两次加入砂糖,打到提起打蛋器蛋白承弯钩下坠状.
  • 9.把打发的蛋白分2次拌入刚才做好的糊里,搅拌均匀即可.
  • 10.烤模地下再放一个烤盘里面倒入1厘米深的热水,170度先烤15分钟,160度25分钟,时间到后炉内继续闷40分钟后拿出来包保鲜膜冰箱冷藏一晚再食用.
