午后来份酥得掉渣的小点心
中秋节期间一直折腾月饼,做得最多的是苏式月饼,这个在中秋节期间也可用来当月饼,平时做为一款小点心也是非常棒的,这不今天就来一款

  • 低筋面粉180g
  • 紫薯泥300g
  • 绿茶粉3g
  • 鸭蛋黄10个
  • 云豆馅400g

Steps to make 午后来份酥得掉渣的小点心

  • 1.把油皮中的全部材料放入面包机桶里,启动和面程序,揉到面团扩展阶段,揉好的油皮用保鲜袋装好,封好口,放在温暖处,醒发30分钟油皮材料:中粉(普通面粉)225g、猪油80g、糖粉45g、水90g。油酥材料:低粉180g、猪油90g、紫薯泥5g、绿茶粉3g,全部材料混合,揉匀
  • 2.将油酥平均分成三等份,取其中两份分别加入紫薯泥和抹茶粉,揉均匀,然后放盖上保鲜膜放到温暖处醒发,20分钟左右。
  • 3.等待的时间,把云豆馅和紫薯泥分成14份(平均每份35g)揉圆,剩余的云豆馅分成10份揉圆(平均每份25g)
  • 4.取25g每个的云豆馅,包入蛋黄
  • 5.用手揉圆,依次做剩下的9个,全部做好后用保鲜膜盖起来,备用
  • 6.把紫色和绿色的油酥分别平均分成4份,原色的油酥平均分成8份,均匀好后揉圆。
  • 7.油皮平均分成3等份
  • 8.从分割好的3份油皮中最其中2份,分别平均分成4等份揉圆,剩下的1份油皮平均分成8等份揉圆
  • 9.取一份油皮,用手掌压平,包入一份紫色油酥
  • 10.取一份油皮,用手掌压平,包入一份抹茶油酥
  • 11.上述步中的面团揉圆,收口向下放置,包好的盖上保鲜膜备用,依此方法将所有的面团做完注:此步骤中体积大的油酥对应体积大的油皮,反之亦然。
  • 12.取其中一个面团,用擀面杖擀成椭圆形状态(三种颜色同样的操作方法)
  • 13.然后从下往上卷起来,全部卷好之后,盖上保鲜膜,醒发20分钟
  • 14.所有面团全部弄完后,盖上保鲜膜醒发20分钟,然后按上述步骤再擀开一次卷起来,同样盖上保鲜膜醒发20分钟
  • 15.取其中一个紫色或绿色面团卷,用刀子从中间一分为二
  • 16.取切开的半个卷,用手掌压扁,然后用擀面棍擀开,中间稍微厚一点,两边薄一点
  • 17.擀开的面饼翻个面,包入准备好的馅
  • 18.慢慢的收口,捏紧,封口处朝下
  • 19.依此方面做剩下的紫色和绿色卷。原色卷直接擀开后包入馅
  • 20.所有的做后,在原味的蛋黄酥表面刷上蛋黄液,撒上少许黑芝麻。
  • 21.放入预热好的烤箱中层,上下火160度,中上层烤30分钟左右。
