  • 1.把两片鱼肉片下来,斜刀切大片。鱼头、鱼骨、鱼头改刀斩开。
  • 2.将鱼片放入盆中,加盐、胡椒粉、白酒、生粉、一个蛋清,抓拌均匀。
  • 3.鱼骨、鱼排、鱼头放另一碗中,放盐、胡椒粉、白酒、一个蛋黄、适量生粉、葱姜水,抓拌均匀。
  • 4.起锅烧油,把鱼头、鱼排、鱼骨下锅,炸至金黄色捞出控油。
  • 5.炸好的鱼排、鲜骨、鱼排控油备用。
  • 6.把黄豆芽加葱姜蒜下锅炒熟放入汤盆中垫底。
  • 7.再起锅烧油,放葱段、姜片、蒜片、花椒爆出香味,下一勺豆瓣酱炒出红油。
  • 8.加适量的开水。
  • 9.放入炸好的鱼头、鱼骨、鱼排,调入适当的白糖、胡椒粉、鸡精、老抽、蚝油,略加炖制。
  • 10.把鱼头、鱼骨、鱼排捞出来,放在豆芽上。
  • 11.锅中的汤再次烧开,放入鱼片,待鱼片浮起,轻轻推动手勺,使鱼片受热均匀,立即关火。
  • 12.连汤带鱼片倒入汤盆中。
  • 13.洒上香葱碎,放一勺辣子面,淋上热油。
  • 14.成品。
