豆沙餐包
前段时间自制的红豆沙没用完,又囤积了不少面粉,周末就待在家继续我的烘焙之旅,最能消耗豆沙和面粉的就数豆沙餐包,在这个餐包没出炉之前,其实我心里没多大底气,因为烘焙我是新手,餐包更是第一次制作,功夫不负有心人,当烤箱里渗透出浓郁的奶香面包味时,让你不自觉的往厨房里跑,细心观察它的变化,由刚开始的白白胖胖慢慢变成金灿灿的样子,这过程太美妙了,喜悦的心情油然而生。一出炉就受到家人的赞许,真心好吃啊,口感柔软,奶味十足。

  • 高筋面粉290克
  • 全蛋液20克
  • 细砂糖40克
  • 黄油20克
  • 1/4小勺
  • 奶粉17克
  • 纯牛奶150克
  • 酵母1小勺

Steps to make 豆沙餐包

  • 1.称量好所需食材,面包桶内依次加入牛奶、白糖、盐、全蛋液、奶粉
  • 2.再倒入高粉,酵母粉
  • 3.面包机通电,使用揉面功能30分钟,揉面中途(约15分钟后)按一下暂停键,用筷子把粘在面包机内壁的干粉划入面团内,顺便加上黄油,继续搅拌工作
  • 4.搅拌好的面团放在面包机内发酵,面团膨胀至2、5倍大左右
  • 5.取出面团在案板上排气,这时面团有点粘手,双手涂抹一点黄油就可以轻松整形了
  • 6.把面团分成若干个同等大小的小面团,遮上保鲜膜在常温下醒发10分钟左右
  • 7.同时取出红豆沙,分成大小一样圆形
  • 8.包入面皮中,收紧封口,搓圆
  • 9.全部包好后放在烤盘上,包子之间留一些空隙,因烘烤的过程中面包还会膨胀变大
  • 10.放入烤箱中再次发酵,(这时烤箱不用接通电源)在烤箱内放一碗热水,水蒸气的热力可以帮助面包快速醒发
  • 11.同时备好蛋黄液,白芝麻
  • 12.面包膨胀至2倍大时取出,表面刷上一层蛋黄液
  • 13.撒些白芝麻
  • 14.放入烤箱中层,180度15分钟
  • 15.烘烤至餐包表面金黄色即可
