  • 1.鸡脯肉与姜片、花椒入冷水锅内,小火煨煮10分钟。
  • 2.鸡肉至熟,浸入冰水中片刻,取出擦干水分;葱白洗净,切成与鸡丝相仿的粗丝。
  • 3.用小木棒将肉捶松(或用刀背拍松)后,顺筋用手撕成粗丝。
  • 4.将白糖、生抽勺、花椒面、香油、油辣子、芝麻酱、香醋混合调成料汁。
  • 5.取一碗,放入鸡肉、葱丝,淋入料汁,撒上芝麻,即可。
