中秋佳节不可缺少的苏式月饼
中秋佳秋祝大家节日快乐!过节当然得吃月饼,那就自己动手做一份美味的月饼吧!

  • 白砂糖200g
  • 九三非转基因大豆油200g
  • 红小豆250g

Steps to make 中秋佳节不可缺少的苏式月饼

  • 1.将油皮材料(普通面粉160g、白糖10g、猪油50g、清水70g、抹茶粉5g)混合揉成光滑的面团,松弛30分钟左右
  • 2.将油酥材料(低筋面粉120g、猪油50g)混合揉成光滑的面团,松弛30分钟左右
  • 3.将油皮面团平均分成2份,取其中1份,加入抹茶粉揉均匀
  • 4.将油皮和油酥面团分别均匀分成20份,揉圆(油酥约8g/个,油皮15g/个)。
  • 5.取其中一个油皮面团放手掌压扁,放一个油酥面团在油皮面团上
  • 6.用油皮面团把油酥面团包起来,包好的面团收口处朝下,按此步骤完成剩下的面团。
  • 7.用擀面杖把面团擀成长椭圆形
  • 8.从外往内卷起来,收口处朝下
  • 9.按此步骤完成剩下的面团。所有面团完成后,盖上保鲜膜松弛20分钟左右,重复此步骤,继续将面团擀成长椭圆形,然后再卷一次,继续松弛20分钟左右。
  • 10.面团第二次松弛时,开始准备馅料,将提前备好的馅料平均分成20个(25g/个)
  • 11.取其中一个小面团,两边向中间折叠,用手按压一下,擀成圆形,放1个馅在中间
  • 12.包起来,捏紧,收口处朝下
  • 13.所有的月饼做完后,原味月饼上刷一层蛋黄液,撒上少许白芝麻,放入预热好的烤箱,中上层,上下火,烤25分钟左右。
  • 14.1、芸豆和红小豆用水浸泡12小时以上(中途换1次或2次水)2、浸泡好的芸豆,去掉外表皮,放高压锅中煮熟3、煮好的芸豆放料理机中打成泥4、打好的芸豆泥和红豆泥分别加100g白砂糖和100g九三非转基因大豆油放入不沾锅中炒至变深黄色即可(油不要一次性全部加入,翻炒过程中分次加入)
