Steps to make 酸菜鱼

  • 1.草鱼洗净,去骨,去皮
  • 2.鱼肉片成两个硬币厚的鱼片
  • 3.加一匙盐用手抓两分钟左右到鱼片发粘,清洗干净.加鸡蛋清,葱段,姜丝,一匙盐,少许糖,料酒,生粉抓匀腌制半小时左右
  • 4.锅里放油把酸菜煸香盛出备用
  • 5.热锅凉油下入小米椒,干辣椒,姜末爆香,再下入鱼骨鱼皮煸炒,烹入料酒,加开水半匙糖烧开,水要一次加够,鱼汤雪白后再中火煲10分钟
  • 6.下入酸菜再煲10分钟,把酸菜鱼骨捞出
  • 7.鱼汤大火烧滚,下入鱼片烧开倒在酸菜上
  • 8.洒上香菜,把蒜末青红椒末放中间,淋上热油
