Steps to make 杭椒牛柳

  • 1.牛里横切成条状(这样可以将长纤维切断,容易入味也易嚼烂),用料酒、酱油、盐、小苏打、淀粉和一汤匙食用油拌匀腌制15分钟。
  • 2.杭椒去头去尾用刀拍松,红辣椒去籽去筋切丝备用,不喜欢吃辣的可能不放红辣椒,葱姜蒜切片备用。
  • 3.平底锅烧热,多放一些油,放入牛柳用筷子划散。
  • 4.滑炒至牛肉变色后盛出待用
  • 5.另起炒锅加热后倒入食用油,放入葱姜蒜煸香。
  • 6.倒入杭椒炒至断生
  • 7.最后放入牛柳,再加入一小勺白糖、少许盐、料酒、一汤匙蚝油炒匀即可。
