自制豌豆凉粉
每到夏季,是不是特别喜欢吃口凉拌菜,清新、凉爽,不像吃热菜那样大汗淋漓。凉粉有多种多样,不管什么成份的凉粉,炎热的夏季,大家都不会拒绝吧。

Steps to make 自制豌豆凉粉

  • 1.找两个一样的杯子,按1:6的比例,豌豆淀粉一份,水六份。
  • 2.把五份水放入锅里烧热。
  • 3.一份水倒入淀粉中。
  • 4.调制均匀。
  • 5.水烧热至锅底冒小气泡,但不能烧开,调至中小火 。
  • 6.把搅拌均匀的淀粉液,徐徐倒入热水中,并不断搅拌。
  • 7.直至淀粉液粘稠开透。
  • 8.关火倒入容器中。
  • 9.准备一个大点的盆装入凉水,然后把凉粉盆放在上面,有利于快速凝固。
  • 10.等表层凝固,可以把凉水盆慢慢下潜,没入水中,如果水温升高,可再换一盆凉水。
  • 11.如果家里有冰袋,可以把冰袋放入凉水盆中,加速降温。
  • 12.凉粉完全变成白色,按压中间部位,比较结实,就可以出模了。用手轻压边缘位置,稍微移动倒扣即可。
  • 13.把辣椒和蒜切碎,放入碗中。可以加些姜末,既能提味也能平衡生冷。
  • 14.喜欢吃麻的口味,可以加点藤椒油和花椒油。
  • 15.加入其他调料,碗汁调好。
  • 16.凉粉儿切成自己喜欢的形状,淋入碗汁即可。
