肉臊子面
新近在下厨房学的肉臊子面,和我以往的做法有所不同,调料的种类更多,味道更丰富些。

原材料:鲜面条 猪肉沫
调料:肉臊子1、姜 甜面酱 生抽 老抽 冰糖 料酒
调料汁2、生抽 香油 辣椒油 胡椒粉 蒜水 小葱 鸡精 白糖 陈醋 芝麻酱

    Steps to make 肉臊子面

    • 1.面条要鲜面条,猪肉沫三分肥七分瘦为好。
    • 2.先做蒜水,把蒜压碎加凉开水。
    • 3.炒臊子。热锅凉油加入猪肉沫划散,炒至变色后加入姜沫。
    • 4.依次放入生抽、老抽、甜面酱、冰糖、料酒炒匀,一直保持中小火翻炒。
    • 5.至锅内的油变清亮,肉缩水变干颜色红亮时关火。
    • 6.准备调料汁,将生抽、香油、辣椒油、胡椒粉、蒜水、鸡精、白糖、陈醋、芝麻酱放入小碗中搅拌均匀,调料的比例根据自己口味添加,不过芝麻酱不要加太多,芝麻酱作用只是为了让调料更好的挂在面条上。
    • 7.煮面条熟后过凉水。
    • 8.将面条甩干水分,放入大碗中,倒入调料汁,加入炒好的臊子,撒入小葱,拌匀即可。
    • 9.炒好的肉臊子。
