草莓芝士挞
这个季节的草莓可真是不好找了,不过既然想要用,那么就得费心寻找啦。。。找了几家超市,终于找到啦~~

材料:
挞皮:黄油125g,盐2.5g,细砂糖100g,鸡蛋1个(净重约50g),蛋黄1个(重约20g),低筋面粉250g
芝士馅:奶油奶酪100g,淡奶油140g,糖粉60g,草莓50g
表面装饰:淡奶油100g,糖粉10g,草莓适量

  • 鸡蛋1个,净重约50g
  • 蛋黄1个,重约20g
  • 低筋面粉250g
  • 奶油奶酪100g
  • 淡奶油140g
  • 糖粉60g
  • 草莓50g
  • 淡奶油100g
  • 糖粉10g

Steps to make 草莓芝士挞

  • 1.将鸡蛋1个+蛋黄1个打入小碗总,搅散备用
  • 2.黄油在室温下软化后加糖
  • 3.用电动打蛋器打发
  • 4.分次加入蛋液
  • 5.搅打均匀
  • 6.筛入低粉、盐
  • 7.拌匀后盖保鲜膜冷藏一小时
  • 8.称取25g面团用掌心搓圆,压扁后放入挞模
  • 9.轻轻按压,至均匀布满挞模
  • 10.边缘比模具高出2~3mm
  • 11.将做好的挞皮依次摆放入烤盘
  • 12.用叉子在底部戳洞
  • 13.送入预热好的烤箱中层,180度约25分钟
  • 14.出炉后晾凉备用
  • 15.奶酪100g+淡奶油40g,一起放入小盆中
  • 16.隔水加热并不断搅拌,直至顺滑
  • 17.放凉备用
  • 18.淡奶油100g+糖粉60g,隔冰水慢速打至7分发
  • 19.将晾凉的奶酪糊倒入淡奶油中
  • 20.继续搅打均匀
  • 21.草莓洗净后擦干表面的水分,切成小粒
  • 22.加入打匀的奶油奶酪中
  • 23.拌匀
  • 24.用勺子装入晾凉的挞皮
  • 25.送入烤箱中层,180度约10分钟
  • 26.出炉晾凉即可直接食用
  • 27.也可以用打发的淡奶油和草莓装饰后再食用
