轻乳酪蛋糕
前两次做的乳酪蛋糕因为奶酪的用料比较多,所以略感厚重,偶然间发现一个配方减少了一半奶酪的量,做出来的口感就清爽了很多。

  • 低粉36g
  • 玉米淀粉18g
  • 60g
  • 玉米油30g
  • 鸡蛋2颗
  • 细砂糖10 20g

Steps to make 轻乳酪蛋糕

  • 1.奶酪和水一起放入料理机搅打细腻,倒入碗中备用。
  • 2.鸡蛋蛋清和蛋黄分离,放蛋清的器皿无油无水。此时烤盘中加入2cm左右的水放在烤箱下层,烤盘上放烤网。上下火预热150度。
  • 3.蛋黄中加入10g细砂糖,油和奶酪糊搅拌均匀,筛入低粉和玉米粉。
  • 4.将面粉搅拌成比较细腻的面粉糊备用。
  • 5.蛋清里加入0.5g塔塔粉,分两次加入20g细砂糖。
  • 6.电动打蛋器搅打大约5分钟硬性发泡即可。
  • 7.将1/3蛋白加入面粉糊,上下翻搅均匀。再将面粉糊倒入剩下的蛋白,同样上下翻拌均匀。
  • 8.事先用油纸剪铺在模具底部或者底部涂一层黄油防止粘黏。
  • 9.将蛋糕糊倒入模具,20公分左右的高度往地上轻摔两下振出大气泡,放入烤箱。
