四喜丸子

  • 料酒2勺
  • 蚝油2勺
  • 水淀粉1勺

Steps to make 四喜丸子

  • 1.肉末中加入适量1个鸡蛋、盐、姜末、胡椒粉和淀粉, 顺着一个方向搅动上劲;
  • 2. 加入适量的荸荠末, 顺着刚才的方向搅动;
  • 3. 再接着用手摔打肉馅,使其上劲;
  • 4. 旁边配碗水,取出一肉团,中间放入一个煮熟的鹌鹑蛋,包好;
  • 5.左手倒到右手, 不停地转来转去, 中间如果有点粘, 可以用手粘点水, 直至成团光滑的圆子;
  • 6. 锅中烧热油,六、七成热时下入刚团好的丸子炸;
  • 7. 将丸子炸至表面金黄后捞出;
  • 8. 锅中放少许油,下入葱姜、八角、桂皮、香叶煸炒;
  • 9.煸炒出香味后下入刚炸过的丸子;
  • 10. 再加入适量的开水, 生抽、料酒和少许红曲米;
  • 11. 大火煮开, 加盖, 转为小火, 煮上三十分钟;
  • 12. 捞出大粒的姜葱蒜大料等杂物;
  • 13.再加入少许蚝油, 开大火,大火收汁后将丸子捞出;
  • 14. 大火收汁后将丸子捞出,剩余的汤汁加入适量的水淀粉勾芡;
  • 15. 将芡汁浇淋在丸子上;
  • 16.最后放上些做成铜钱状的红萝卜点缀。
