干煸黄豆酱
国庆期间,大雨,中雨,连绵细雨只能回老家宅家做美食,大铁锅做饭才是人间烟火气,做个冬天常备菜,干煸黄豆酱,香辣开胃,不管是拌饭,夹馍都超好吃。

  • 黄豆两碗
  • 花生半碗
  • 核桃10个
  • 黄豆酱1瓶
  • 豆豉2包
  • 小米辣2斤
  • 大葱1颗
  • 生姜1块
  • 香菜2颗
  • 洋葱1个
  • 香菇2个
  • 香叶3片
  • 桂皮1块
  • 八角3个
  • 高度白酒250g
  • 干小米辣6个
  • 花生油750g
  • 熟白芝麻200g

Steps to make 干煸黄豆酱

  • 1.黄豆挑掉坏豆,用清水多洗几遍,浸泡一晚上。
  • 2.锅中加水,将浸泡好的黄豆倒进去,里面加大葱段,香叶八角桂皮花椒粒大火烧开,煮至黄豆用手一搓就碎就可以了,捞掉所有香料和黄豆皮。
  • 3.控干水分备用。
  • 4.准备其他辅料,生姜,洋葱,香菇切片,大葱切成小段,香菜清洗干净。
  • 5.小米辣洗干净。
  • 6.剁成辣椒沫。
  • 7.花生,核桃和杏仁放电饼档小火烤熟。
  • 8.去掉外皮用刀切成小块,不要剁的太碎,大一点有嚼头。
  • 9.锅中倒油,将所有调料放进去小火炒出香味变成金黄色捞出。
  • 10.将黄豆倒进去,里面加花椒粒小火慢炒,炒至黄豆变色,劲道。
  • 11.将小米辣碎倒进去不停的翻炒。
  • 12.小米辣变色,黄豆酱和豆豉放进去,再加适量盐翻炒均匀,再将高度白酒倒进去翻炒。
  • 13.将花生,核桃和杏仁碎放进去翻炒均匀。
  • 14.满屋飘香的黄豆酱炒好了。
  • 15.最后撒上白芝麻搅拌均匀关火。
  • 16.是不是很有食欲,加个馍太香了(晾凉装瓶能吃一个冬天)。
