三喜虎皮鹌鹑蛋
儿子要去春游,与他商量好一部分食物超市买,然后我再给他做份鹌鹑蛋一起带去,儿子拍手称好。这道三喜虎皮鹌鹑蛋是从四喜烤麸演变而来的,“四喜烤麸”也称为“四鲜烤麸”,是烤麸配四样鲜味(笋,黄花菜,木耳,香菇)制成的传统名菜,我的鹌鹑蛋配以笋,木耳,香菇就做成了三喜虎皮鹌鹑蛋。
这道菜鲜,香,咸,甜营养丰富,喜吃辣的再放几个红辣椒,出外游玩带上它是最解腻了。
儿子春游回来得意的汇报说,老师也吃了很多,同学还说你妈的手艺真好,听的我心里是美滋滋的,跟儿子又约好了下次出游妈妈给你做更多好吃的。

  • 鹌鹑蛋500克
  • 香菇4朵

  • 黄酒10ML
  • 春笋200克
  • 木耳30克
  • 母子酱油15ML
  • 香叶3片
  • 桂皮1小片
  • 白糖10克
  • 食用油200ML

Steps to make 三喜虎皮鹌鹑蛋

  • 1. 准备食材
  • 2.锅内放入冷水(水量能没过鹌鹑蛋),放入3克左右盐(这样蛋不容易煮破,而且利于剥壳),鹌鹑蛋洗净放入锅内,大火煮开再煮2分钟左右关火焖3分种左右,香菇,木耳泡开,多次清洗,再浸水泡开(水不要倒掉)
  • 3.鹌鹑蛋煮好后用冷水浸泡2分钟,剥壳,笋剥皮冼净切片,香菇去蒂剪成3等份,木耳撕碎,香料备齐
  • 4.热锅倒入食用油,油温7成热时倒入鹌鹑蛋中小火炸制,并不断翻动鹌鹑蛋,炸到蛋表面发皱出锅
  • 5.锅内留约40ML的油,放入笋片大火翻炒,再放入木耳香菇翻炒2分钟,
  • 6.放入鹌鹑蛋,再放入香料及调料及浸过香菇的水,大火煮开加盖转小火焖煮约40分钟
  • 7.出锅装盘
