    Steps to make 肉末青菜鸡蛋馅饼

    • 1.面粉200g、盐1g加水140g用筷子搅成面团,盖保鲜膜放冰箱冷藏一晚(我是第二天早上做的,为节省时间,所以头天晚上和好面,但面团经过长时间饧发后延展性也更好)。
    • 2.鸡蛋3个磕到碗中,加盐、料酒。
    • 3.打成蛋液。
    • 4.锅中放油烧热,放入蛋液用筷子快速划成小碎粒放凉。
    • 5.青菜洗净焯水后过凉水,撰干水分切细。
    • 6.香葱切细。
    • 7.肉末提前剁细。
    • 8.肉末、虾皮、葱碎放入蛋锅里。
    • 9.加盐、蒜泥、蚝油拌匀。
    • 10.饧发好的面团均匀分成小份(面团比较软,加点手粉不粘手)。
    • 11.取一份擀成中间厚四周薄的面片。
    • 12.放上馅料,左手虎口和右手手指配合收好口。
    • 13.全部做好,收口朝下。
    • 14.轻轻擀成薄饼。
    • 15.锅中放油,放入馅饼两面煎熟。
    • 16.皮薄馅足,很香。
