  人类学家马文?哈里斯在《食物与文化之谜》一书中写道:“告诉我你吃什么,那么我可以知道你是谁”。韩国人会说:“我们吃泡菜,所以我们是韩国人”。在韩国,没有泡菜的饭桌令人难以想象。韩国人对泡菜情有独钟,每家都有专门保管泡菜的“泡菜冰箱”。泡菜味道辛辣,调味品味儿浓,非常爽口。即使是发酵了一个冬天的泡菜,吃起来也如新鲜白菜般爽脆。吃油腻的东西时吃泡菜,可以爽口;跟清淡的东西一起吃,则更令人感觉清淡。韩国泡菜跟以酸味为主的中国泡菜不同,更有别于没有发酵过程的日本泡菜。自然发酵而成的韩国泡菜与其说是食物,不如说是药物,发酵过程中产生的乳酸菌有助于消化,据说还具有防癌作用。泡菜蕴含着韩国人的民族魂,是韩国的又一代名词。
