粉蒸鸭肉
#做鸭的N种方法#鸭肉,看到大家焖的、卤的、烧的、烤的等各种做法,但唯独蒸的吃法少,今天就来一个#粉蒸鸭肉#顺便宣传一下我的家乡饮食文化(不管讲得好不好我都想试一下(*∩_∩*)/羞羞脸)
我的家乡在天门,地方虽说不大,但是天门蒸菜的历史已有近4600年了哟。
天门蒸菜有 素三蒸、荤三蒸、荤素混蒸等蒸法,可以说是能上餐桌的我们几乎都能蒸,鸡鸭鱼肉牛羊鹅就更不用说了。
小雨学做菜比较晚,但是从小就爱跟着爸爸妈妈旁边看。记得小时候我们那里烧柴火灶,烧一锅水放上蒸格,铺上大米再铺上一层素菜最后再铺一层荤菜,饭菜一起熟这样不仅米饭超级香香还能节省不少时间。
现如今这种传统做法也随着科技的进步慢慢的开始减少,就如同我今天做的粉蒸鸭肉,米粉还是选用了天门的米粉,但是用的就是压力锅了。

  • 干大米粉100g
  • 香油少许
  • 生粉少许
  • 老抽少许
  • 少许

Steps to make 粉蒸鸭肉

  • 1.准备好图中材料,鸭肉买的时候让老板切好方便点,不喜欢土豆可以换自己喜欢的配菜哈
  • 2.鸭肉洗净控水腌制半小时左右,土豆切块
  • 3.腌制好的鸭肉加入大米粉拌匀
  • 4.土豆加盐大米粉拌匀,在加入鸭肉
  • 5.土豆加盐大米粉拌匀,再和鸭肉混合,装入碗中上锅蒸20分钟
  • 6.兑好碗汁,青红椒切碎(这个是小雨自己喜欢彩色做的,不用可以省去的)
  • 7.芡汁倒入锅中烧至开始黏稠关火
  • 8.淋在蒸好的鸭肉上,粉蒸鸭肉就做好啦
