    Steps to make 红烧狮子头

    • 1.准备食材。
    • 2.鹌鹑蛋清水中清洗下,入锅煮熟,过冷水剥壳。
    • 3.肉打成肉泥。
    • 4.马蹄去皮切末。
    • 5.肉放盆中,加入鸡蛋、葱花、马蹄末、面包糠、生抽、盐、黄酒。
    • 6.顺同一方面搅打上劲。
    • 7.戴上一次性手套,放适量肉馅在手上,再放入鹌鹑蛋,做成肉丸形状,再左右手来回将肉丸子摔打几下,使之排出空气,结实一点。
    • 8.全部完成了。
    • 9.锅中倒入适量油,烧至8成热时,放入肉丸子。
    • 10.炸至外表呈金黄色(油要温度高点,肉丸下油锅后才能迅速定型,不易散开)。
    • 11.倒出锅内的油,在锅中加入炸好的肉丸子、水、生抽、老抽、冰糖、黄酒、桂皮、香叶、辣椒、八角、盐,大火煮开。
    • 12.转小火30分钟左右至快收汁关火。
