【传统北京风味菜】京酱肉丝
猪里脊肉:猪肉含有丰富的优质蛋白质和必需的脂肪酸,并提供血红素(有机铁)和促进铁吸收的半胱氨酸,能改善缺铁性贫血;具有补肾养血,滋阴润燥的功效;猪里脊肉含有丰富的优质蛋白,脂肪、胆固醇含量相对较少,一般人群都可食用。大葱:葱是温通阳气的养生佐料,作为调料品,葱的主要功能是去除荤、腥、膻等油腻厚味及菜肴中的异味,并产生特殊的香味,还有较强的杀菌作用。医学界认为,葱有降低胆固醇和预防呼吸道和肠道传染病的作用,经常吃葱还有一定的健脑作用。利用葱提炼出来的葱素,对心血管硬化有较好的疗效,还能增强纤维蛋白溶解性和降低血脂。

Steps to make 【传统北京风味菜】京酱肉丝

  • 1.准备好材料。(甜面酱,鸡蛋,猪里脊肉,葱白,豆腐皮)
  • 2.猪里脊切成细丝,倒入少许盐,1勺淀粉、料酒、半个蛋清搅拌匀,腌制20分钟
  • 3.甜面酱3大勺,再加入1大勺的白糖,适量香油搅拌均匀。
  • 4.把搅拌好的甜面酱和豆腐皮一起放入锅内蒸15分钟左右。(蒸过的酱会非常的香浓,这步骤很关键)
  • 5.葱白切细丝装盘备用 。
  • 6.蒸熟的豆腐皮切成小正方形备用。
  • 7.热锅温油将肉丝放入炒散。
  • 8.七成熟时盛出放在盘中备用。
  • 9.锅内重新倒适量的油,油热后把酱倒入炒至粘稠。
  • 10.放入肉丝,快速翻炒均匀,使肉丝均匀挂上酱汁即可起锅,倒入放了葱丝的盘中即可。
  • 11.也可用豆腐皮包上少许葱丝,再加上点肉丝,卷起来吃!吃着很过瘾的一道菜呢!
