火龙果慕斯蛋糕
要过年了啦,做一款象征红红火火的甜点,来过一个红红火火,甜甜蜜蜜的春节。这款甜点就是火龙果慕斯蛋糕。

  • 火龙果350g
  • 牛奶150g
  • 粗粮饼干100g
  • 吉利丁片4片
  • 白糖35g
  • 凉开水50g

Steps to make 火龙果慕斯蛋糕

  • 1.粗粮饼干打碎
  • 2.黄油加温融化
  • 3.融化的黄油倒入饼干碎里。搅拌均匀。
  • 4.模具底部用锡纸包好。拌好的饼干碎铺到模具底部。压平压实。冰箱冷藏两小时,让它变硬。
  • 5.吉利丁片儿提前20分钟用冰水泡的。一定要是冰水哦。
  • 6.牛奶加温到50度左右,放入泡软的吉利丁片。搅拌让吉利丁片彻底融化。
  • 7.淡奶油加糖搅拌至有纹路,还稍微流动的状态。
  • 8.火龙果破壁机搅打成汁。分成250克和100克两份
  • 9.250火龙果汁倒入放了吉利丁片的牛奶里,按均匀。我用的火龙果芝士冷藏后搅打的,所以不用再冷藏了。
  • 10.倒入搅打好的淡奶油里。
  • 11.翻拌均匀成为慕斯液。
  • 12.倒入铺了饼干底的模具中,冷藏两小时以上
  • 13.另取100火龙果汁过滤
  • 14.过滤过的火龙果汁,加入50克的温开水。温度在50度左右,如果不够可以稍微加温。放入一片泡软的吉利丁片,充分搅拌到吉利丁片完全融化。注意温度在50度左右即可,千万不要过高,过高的话会影响凝固。
  • 15.果冻层的慕斯液
  • 16.把果汁倒在慕斯上面。再冷藏两小时
  • 17.模具用热毛巾周围上十几秒就可以轻松脱模了
  • 18.使劲儿挖了一大块,看着不错吧?
